Macronutrients;

Are needed by the body in large amounts. These are proteins, fat and carbohydrates.

 

Micronutrients;

Are needed by the body in small amounts. These are vitamins and minerals.

 

Fibre and water are essential for life but are not classed as nutrients.

 

Other substances found in foods;

Ø  Flavourings and colourings – found naturally or added during food processing.

Ø  Enzymes – natural chemicals found in food e.g. help fruit to ripen

Ø  Preservatives – found naturally in foods or added during processing
