How many times a day are cows milked, how much do they produce, and how is it stored?

Cows are milked twice a day, an average dairy farm produces 2000L of milk, it is then stored in tanks at 4 degrees Celsius until collection 

What is milk?

Milk is mainly water, it is an emulsion (a mixture of 2 liquids)and has tiny droplets of fat suspended in it (cream line)

What is homogenisation?

Homogenisation involves forcing the milk at high pressure through small holes. This breaks up fat globules in order to spread them evenly throughout the milk, this prevents separation of cream layer like in unhomogenised milk 

Describe pasteurisation of milk 

Milk is heated to a temperature of at least 72 degrees for a minimum of 15 seconds and a maximum of 25 seconds 

Describe sterilisation of milk

Milk is heated to a temperature of 113-130 degrees Celcius for approximately 10-39minutes then cooled quickly  

Describe ultra heat treatment of milk 

Milk is heated to a temperature of at least 135 degrees for 1 second then
