Advantages

  • High retention of water soluble vitamins
  • used for defrosting
  • portable
  • saves time and energy
  • easy to clean
  • flavour and colour retention

Disadvantages

  • cold spots if not correctly stirred
  • cannot use metal or plastic
  • lots of space in small kitchens
  • timing cricital, easily overcooked
  • does not brown or crisp foods
  • must have pierced skin or will burst
