Lipids, TG's, fats and oils

?
What are fats important for?
-Nutrition
-Phospholipid bilayer
-Palatability- flavour, texture
-Processing- heat transfer and lubrication
1 of 18
What percentage of calories do fats take up?
35-40%
2 of 18
What are the two essential fatty acids?
linoleic and alpha linoleic acids
3 of 18
Fats are vitamin carriers. What vitamins do they carry?
A,D and E
4 of 18
What are lipids?
compounds that are soluble in non polar solvents and are insoluble in water
5 of 18
What are lipids classified into?
-Simple lipids-waxes, FA, Mono di triglycerides
-Compound lipids- phosphoglycerides, glycolipids
-Derived lipids (sterols, fat soluble vitamins
6 of 18
What is the structure of glycerides?
combined with 3 FA for triglyceride or 2 for di or 1 for mono.
Has an ester bond to link FA and glycerol to from triglyceride
7 of 18
What is the structure of a phosphoglyceride?
-lipophilic and hydrophilic ends
similar to triglycerides but have 2 FA instead of 3
8 of 18
What is the structure for fatty acids?
Chains of carbon and hydrogen atoms with a terminal carboxyl group.
Straight chains and are either saturated or non saturated
9 of 18
What is the structure for a saturated fatty acid?
No double carbon carbon bonds
-Anoic= saturated
10 of 18
What is the structure for an unsaturated fatty acid?
has one or more double bonds.
Bonds usually methylene interrupted
Enoic=unsaturated (oleic acid)
11 of 18
What are the 4 abbreviation systems for fatty acids?
-Trivial names
-IUPAC names
-The carboxyl reference system
-Omega labelling system
12 of 18
How is the omega system used?
So the first number represents how many carbons are used in it. The next is how many double bonds there are and the next number represents what carbon number the double bond is on.
13 of 18
How is the carboxyl reference system used?
The first number represents how many carbons are in the chain and the second number is how many double bonds
14 of 18
How can you tell if there are any double bonds or not in a carbon?
If the name has anoic in it, it means there are no double bonds, if the name has enoic in it, it means there are some double bonds.
15 of 18
What type of fatty acid would have a kink in it?
cis fatty acid
16 of 18
What type of fatty acid wouldn't have a kink in it?
Trans fatty acid
17 of 18
What is the configuration of double bonds in fatty acids?
double bonds can be cis - alkyl groups on same side or trans-alkyl groups on opposite sides
