Conduction - The transfer of heat through hot particles bumping into one another and the next particle warming up and passing it one again and again and again etc. Hot materials expand due to the particles moving more and getting slightly further apart.

Convection - The transfer of heat due to the particles heating and rising as the become less dense than the colder particles. The colder particles than heat up and rise aswell and a convection current is set up.
