- Damage to bilayer
- If a protease enters the body, could break down proteins embedded and attatched to phospholipid bilayer
- Tests
- Biuret test: Add 2cm3 of sample, then the same amount of sodium hydroxide solution to keep pH neutral.
- Then add a few drops of 0.05% coppuer sulfate solution and mix gently
- A lilac colour change shows presence of protein, if it stays blue there is no protein present.
- Then add a few drops of 0.05% coppuer sulfate solution and mix gently
- Reducing sugars: Add cm3 food sample to a test tube.
- Add an equal volume of benedicts reagent, then heat gently in boiling water for 5 minutes
- Brick red precipitate shows presence of reducing sugars
