      • If a protease enters the body, could break down proteins embedded and attatched to phospholipid bilayer
    • Tests
      • Biuret test: Add 2cm3 of sample, then the same amount of sodium hydroxide solution to keep pH neutral.
        • Then add a few drops of 0.05% coppuer sulfate solution and mix gently
          • A lilac colour change shows presence of protein, if it stays blue there is no protein present.
      • Reducing sugars: Add cm3 food sample to a test tube.
        • Add an equal volume of benedicts reagent, then heat gently in boiling water for 5 minutes
          • Brick red precipitate shows presence of reducing sugars
