    • Hydrolysis: Breaking down of a polymer to a monomer, using a water molecule.
    • Diasaccharides
      • Glucose + Glucose = Maltose
      • Glucose + Galactose = Lactose
      • Glucose + Fructose = Sucrose
    • Polysaccrides
      • Starch: amylose (long chains, helix, compact) amylopectin (branched, straight) alpha glucose, insoluble
      • Glycogen: shorter chains, highly branched, insoluble, alpha glucose
      • Cellulose: beta glucose, hydrogen bonds, microfibrils, straight, unbranched
