- Test = Equal volumes of water and ethanol (emulsion test)
- positive result = white emulsion produced

- positive result = Blue to lilac/purple
- Reducing Sugars (can reduce something)
- Test = Benedict's and heat to 80 degrees
- results = blue = none Green = traces orange = moderate Brick red = large ammount
- E.g. monosacchari- des like glucose, fructose, galactose and maltose
- Non reducing sugars
- Test = benedict's and heat to 80 degrees. if still blue hydrolyse it with acid and then neutralise with alkali and re test the benedict's
- Positive result = turns from blue to red second time around
- E.g disaccharides like sucrose and lactose
