Colour - dead colours; white, cream, dark, green, brown

textures - crunchy/soft, changes with cooking so don't over cook,

Shape - is important for buffets as there are different types of foods which may all be the same shape such as pastries and sausage rolls
presentation - savory(garnish) - sweet(decoration) -- dishes - savory (oval plates) - sweet (round plates)

Factors to changing a recipe - 1) ingredients - for veggies,vegan,coeliac 2) nutrition/make more healthier 3) allergies - gluten,nuts, lactose
4) special diets - low fat, low carb, invalids, diabetics, sports, fibre, children, elderly, budget, luxury, low salt.

5) children - E's - sugar - fat - finger food/small portions
6) Pregnant women - no alcohol, raw eggs, shell fish, liver - vitamin A, soft pates or cheese -> listeria which can lead to miscarriages

Side effects 1) reduce fat - reduces flavour, moisture reduces, goes stale quicker,pale colour
2) increasing fat - greasy, darker, more flavour

3) Reduce sugar - less flavour, paler, poor keeping, goes off faster, rises less
4) increasing sugar - takes longer to cook, will be darker, sugar crystals, hardens on cooling,

5) Reducing salt - reduces flavour, changes the texture, goes off quickly, might not rise.
you wouldn't increase the salt, or the sugar usually and maybe not the fat
