Latent heat - hidden thermal energy.
Water can come in the form of a solid (ice), liquid (water) or gas (water vapour). Water can go from one state to another, but it needs heat to be able to do this.
Using latent heat:
Ice - water - vapour
Releasing latent heat:
Vapour - water - ice
