- Protein
- The Biuret test.
- 1. Potassium hydroxide is mixed is mixed with the food
- 2. Two drops of copper sulphate are added
- 3. if the pale blue solution turns purple, protein is present
- The combined solution of Potassium Hydroxide and Copper Sulphate is called a Biuret solution
- Lipids
- Ethanol emulsion test
- 1. Mix with ethanol and shake. Then pour some of the solution into water and shake again
- 2. Fats and oils will float to the surface forming a cloudy emulsion
- Starch
- 1. Iodine solution is added
- 2. If starch is present the solution changes from yellow-orange to blue-black
- Sugars
- 1. Mixed with an equal volume Benedict's solution
- only works for reducing sugars like glucose so won't work for sucrose
- 2. Then is placed in a hot water bath for a few minutes
- 3. Reducing the sugars causes a reduction reaction and a colour change and may form a precipitate
- Benedict's solution is light blue; green = small amount. Yellow = more sugar and red=lots of sugar
- 1. Mixed with an equal volume Benedict's solution
