First 166 words of the document:

Enzymes are biological catalysts
enzymes denature at 40C
they speed up a reaction with But changing themselves
enzymes can be used in two different way
1. anabolicto build up
2. catabolic is to break down
enzymes can be use anabolic to build up and as catalyst to break down.
lock and key method
that the substrate (the thing which is being broken down) has a similar shape to the enzyme
the enzymes active site
and when enzymes denature that means the substrate cant fit in!
the high temperature and low/high ph break the bonds holding the active site in place
meaning the shape changes
causing the substrate to be unable to enter the active site to be broken down
high temp and low or high PH levels cause the bonds to break so the active side changes shape and
the substrate is unable to enter the active site
