What is a catalyst
A catalyst is a substance which increases the speed of a reaction without being changed or used up in the reaction.

What happens if the enzyme is heated past it's optimum temperature?
Some of the bonds holding the enzyme together will break. It will lose it's shape and will therefore not be able to function. The enzyme is denatured.
