Where is bile produced?
The liver.

What does bile do?
It acts in the small intestine to neutralise the acid from the stomach.

Alkaline (this is why bile is added to neutralise the acid, it also makes the solution slightly alkaline).

They have many uses in the home (eg. biological detergents) and in industry (eg. baby food).

Proteases and lipases.

They are more effective at low temperatures (high temperatures will denature the enzymes in them).

How are proteases used in industry?
Proteases are used to 'pre-digest' baby food (making it easier for babies to digest their foods).

Carbohydrases are used to convert starch into sugar syrup.

How is isomerase used in industry?
Isomerase is used to convert glucose syrup into fructose syrup. This is much sweeter, and therefore can be used in smaller quantities in slimming foods.

What are the advantages of using enzymes in industry?
Enzymes are catalysts - they can bring about reactions at normal temperatures and pressures that would otherwise be expensive and energy demanding.

What are the disadvantages of using enzymes in industry?
Enzymes are denatures at high temperatures, and are expensive to produce.
