What is a polysaccride?
Polysaccharides are formed by the condensation of many glucose units

Long, straight, unbranched, B-glucose, hydrogen bonds, microfibrils, fibres

Plants cells, A-glucose, amylose and amylopectin, helix, insoluble

Animal cells, A-glucose, highly branched, shorter chians, helix, insoluble

What is the biochemical food test for reducing sugars?
Add Benedict’s solution (blue) Heat If reducing sugar present will turn green, yellow, orange, red (can just say red)

What is the biochemical food test for non-reducing sugars?
Add Benedict’s solution (blue) Heat Will stay blue (negative test) Add HCL, heat and neutralise (by adding sodium hydrogen carbonate) If sucrose present, the test will be positive.
