Crushing- the oil is removed by pressing the oil out & distillation, water & other impurities are then removed

Vegetable oils that are unsaturated can be hardened by reacting them with hydrogen in the presence of a nickel catalyst at about 60 degrees Celsius

How does hydrogenation harden vegetable oils?
Hydrogen adds to the carbon to carbon double bonds, the hydrogenated oils then have a higher melting point so that they are solids at room temperature
