Why are vegetable oils used as food and fuels?

It is an emulsifier so it prevents the oil and the vinegar from separating

They are thicker than the two separate oil and water, they have a better texture, a nicer appearance and they have the ability to coat solids

Because saturated fats can cause health problems

By crushing the seeds, pressing the seeds, collect the liquid and separate the oil from the water

The react with hydrogen at 60 C with a nickel catalyst

Describe how an emulsifier works
The emulsifiers hydrophillic head of the emulsifier goes into the water and the hydrophobic tail goes into the oil droplets causing the oil droplets to be dispersed throughout the water
