What are fats and oils?
fatty acids combines with glycerol by ester bond. saturated=fats as chains fit neatly increasing van der waals. unsatursated=oils, chains bent so cant get close therfore lower melting point

1-bonds between ions break- lattice enthalpy of dissociation 2) bonds with water made-enthalpy of hydration. solution= lattice dissociation + hydration
