What causes the souring of milk?
lactic acid and bacteria act on lactose converting it into lactic acid. It then curdles and separates into curds and whey.

Describe the method of pasteurizing milk
The milk is heated at 62C - 65C and is held there for 30 minutes or heated to 72C. It is then held there for 15 seconds and cooled rapidly to below 10C. This destroys pathogenic bacteria and reduces spoilage bacteria.

Describe the method of ultra heat treatment
the milk is heated to 132 C for 1 second then sealed immediately in foil lined containers. In this process all bacteria are destroyed and the entry of more bacteria is prevented
