milk is forced through fine aperture taht breaks up fat globules to an even size so that they remain distruputed throughout the milk and don't form a layer of cream

What is evaporated milk?
concentrated sterilised milk, usually canned and had twice the concentration of milk

Concentrated in same way as evaported and sugar is added

produced by the water content of milk being evaporated off to produce a solid that has about 5% water content
