An enzyme for breaking peptide bonds. it has a large cavity and no preference of charge of protien

Experimental studies of chymotrypsin
uses esters which produce a colour to show enzyme kinetics showing burst and then slower phase.

Defining it's mechanism
we can trap acyl-enzyme intermediate to make sure. by making the solution very acidic so that the acyl intermediate cannot be release by the nucleophilic attack of water.
