How is emulsion formed?
If we shake, stir or beat oil and water mixture together and tiny droplets form that can be slow to separate.

How are the properties of an emulsion different to the oil and water they are made from?
Emulsions are opaque and thicker than the oil and water they are made from.

How does mixing oil and water to produce an emulsion have benefits?
It has improved texture, appearance and their ability to coat and stick to solids.

What examples are there of emulsions within food products?
Milk, cream, salad dressings and ice cream.

Some water-based paints and many cosmetic creams.

What are emulsifiers?
Substances that help stop the oil and water from separating into layers.

Why do most emulsions contain emulsifiers?
To keep the emulsion stable.

What emulsions are used in many foods?
Vegetable oils.

What do the molecules in emulsifiers have?
Emulsifier molecules have a small hydrophilic part and a long hydrophobic part.

What is the hydrophilic part (or head) of an emulsifier molecule attracted to?
Water.

What is the hydrophobic part (or tail) attracted to?
Oil.

What does the hydrophobic parts of many emulsifier molecules do, and therefore cause?
Go into each oil droplet, and so the droplets become surrounded by the hydrophilic parts, this keeps the droplets apart in the water, preventing them from joining together and separating out.

Why can't you see through an emulsion?
Because the liquids remain as tiny droplets and do not dissolve.

How can you see through a solution?
In a solution the substances dissolve, which means they mix completely and the solution is clear.

How can you recognise an emulsion?
Opaque or not clear or cannot see through it, thick, coats solids.

What is an emulsifier?
A substance that stops oil and water from separating. A substance with molecules that have a hydrophilic part and a hydrophobic part.
