What is a waited service? What are the advantages?
A waited service is when waiters and waitresses take customers' orders and deliver their food. The advantages of this type of service is that lots of people can be served quickly, customers have a wide choice of food and provides a personal service.

What is a gueridon service? What are the disadvantages?
A gueridon service is when the chef finishes cooking the food at the customers table. The disadvantages is that you need a chef that can 'perform' for the customers and specialist equipment is needed such as flambé trolleys.

A carvery service is when customers pay a fixed price to queue up and be served meat. The disadvantages of carvery service is that customers have a limited choice and staff need to be employed to carve the joints of meat.
