What does gelatinisation mean?
When starch is moistened and heatedit thickens, this is gelatinisation. Starch is insoluable in cold water but heat causes liquid to penetrate the starch granule and make it swell. The swollen grain creates a gel.

What does NSP and cholesterol mean?
NSP: non starch polysaccharidis, a type of carbohydrate found in beans and oat. Cholesterol is natural fat made by the liver, eating certain kinds of fats causes the body to make to much cholesterol.
