So that they reduce the amount of reactants wasted which is wasteful and costly, and reduce their costs by ensuring that enough reactants are used as too little reduces the amount of product

mass of atoms in desired product / mass of reactants

Why does industry want high as possible atom economy?
To reduce the production of wasteful, unwanted products which increases costs. Also to make the process more sustainable by making better use of the reactants, so that conserving raw materials and avoiding the need to get rid of wasted products
