Water structure
Water is formed of two hydrogen and One oxygen in a triangular shape and so the oxygen attracts the electron of hydrogen toward itself giving it a partial negative charge and oxygen a partial positive. This means that water has polar bonds.

H-bonds of water
Due to the polarity of the water molecule, the partially positive H is able to form weak bonds (relative to covalent) with a neighboring molecules partially negative oxygen.

Properties of water
Less dense than its solid form. High Specific heat capacity. Present naturally in all three states. Transparent. Cohesion. Good Solvent. Immiscible with hydrophobic molecules. High latent heat of evaporation. Buffer.

evaporation of water has a strong cooling effect and so less water is required to loose alot of heat.

Water is capable of accepting and donating protons and so is called a buffer.
