What difference do proteins have in organic elements to lipids and carbohydrates?
Proteins contain nitrogen as well as the other 3 elements.
1 of 19
What else can also be present?
Sulphur and phosphorus
2 of 19
What are proteins built up of?
From linear sequences of Amino acids (About 20 amino acids make up a protein)
3 of 19
State the basic structure of an amino acid
-NH2 at one end of the amino acid and a -COOH group at the other as well as an R group
4 of 19
How do separate amino acids link?
The amino group of one amino acid reacts with the carboxyl group of another with the elimination of water
5 of 19
What bond is formed and what product is produced?
A peptide bond is formed and the resulting compound is a dipeptide
6 of 19
What is a polypeptide?
A chain of many amino acids joined together
7 of 19
What is the primary structure of a protein?
This is the sequence of amino acids in a polypeptide chain
8 of 19
Describe secondary structure
Secondary structure is the shape that the polypeptide chain forms as a result of hydrogen bonding
9 of 19
What does this secondary structure form?
Alpha helix (spiral) and Beta pleated sheet (wall)
10 of 19
What is the tertiary structure?
When the secondary structure EG Alpha helix, can be folded and twisted to give a more complex, compact 3D structure
11 of 19
How is this new tertiary shape maintained?
Its shape is maintained by disulphide, ionic and hydrogen bonds
12 of 19
What is Quaternary structure?
A combination of 2 or more polypeptide chains in tertiary form
13 of 19
Describe a fibrous proteins structure
A fibrous protein is made of 2 polypeptide bonds in parallel chains or sheets with numerous cross linkages to form fibres
14 of 19
Describe a globular proteins structure
These proteins are compact and folded as spherical molecules
15 of 19
State some properties of fibrous proteins
Insoluble in water, strong and tough
16 of 19
State some functions of globular proteins
Enzymes, antibodies, plasma proteins and hormones
17 of 19
1 fibrous protein consists of...
3 polypeptide strands tightly wound around one and other
18 of 19
What is the name of the substance to test for proteins?
Biuret reagent
19 of 19
