Why do industrial processes use immobilised enzymes

Lactase s an enzyme that breaks down lactose sugar, it can be immobilised in alignated beads before used to produce lactose free milk.

Pectinase is an enzyme used in fruit juice extraction it separates down pectin causing this out to release its juices

Immobilised enzymes Can attach to insoluble material e.g. fibres or encapsulated in aliginated beans and removed

Uses of surace and how is it made
Invertase (sucrose) is produced by cultivating yeast in large fermenters, sucrose found in beet is converted into fructose and glucose using invertase. These are much sweeter then normal sugar hence manufactures can save money since less is needed
