Biotechnology is the alteration of natural molecules using science and engineering.

The enzyme invertase breaks down the sugar sucrose and into glucose and fructose

Protease and carbohydrase

The enzyme chymosin was obtained from the stomach of calves but is now found from other microorganisms once genetically modified
