  • Bacterial contamination:
    • How bacteria contaminate food and cause food poisoning:
      • Bacteria are the most common cause of food poisoning
      • They include:Campylobacter; E.coli; Salmonella; Listeria; S. Aureus
      • Pathogenic bacteria often found in high-risk foods: meat, poultry, fish, seafood, milk, cheese, yoghurt, cream, eggs, pâtes, salads, dirty water
      • In right conditions bacteria (Danger Zone = 5°C to 63°C) divide and multiply every 20 minutes
      • Some bacteria produce spores, which will germinate when conditions are right and produce very dangerous poisons
    • Contamination:
      • Making food unsafe to eat by letting it come into contact with micro-organisms
