- Bacterial contamination:
- How bacteria contaminate food and cause food poisoning:
- Bacteria are the most common cause of food poisoning
- They include:Campylobacter; E.coli; Salmonella; Listeria; S. Aureus
- Pathogenic bacteria often found in high-risk foods: meat, poultry, fish, seafood, milk, cheese, yoghurt, cream, eggs, pâtes, salads, dirty water
- In right conditions bacteria (Danger Zone = 5°C to 63°C) divide and multiply every 20 minutes
- Some bacteria produce spores, which will germinate when conditions are right and produce very dangerous poisons
- Contamination:
- Making food unsafe to eat by letting it come into contact with micro-organisms
