A fat is a solid whereas an oil is a liquid. Fats tend to be from animals whereas oils usually come from plants

Fats and oils are Esters:

We can break these fats into fatty acids and glycerol by adding water

Saturated fats all have single bonds. Unsaturated fats are liquid.

You pump hydorgen through oil to make it more saturated (margarine)
