Production of Pasta
Pasta is made from Durum Wheat, - grown in Italy and parts of USA & Canada. Durum wheat is the hardest of all wheat grown and contains the most Gluten.
The wheat grains are milled to produce semolina.
A dough is made by adding water to the semolina. Eggs salt and vegetable oil may be added.
Spinach or tomato Purée can be added to give flavour, colour and increase nutritional value. Spinach would give the pasta a green colour, whereas the tomato Purée would give a orange/red colour
