Fats                                                                                                              Saturated - animal, butter lard, fatty meat products

Mono unsaturated - olive oil, rapeseed oil, some nuts

Polyunsaturated - margarine, sunflower oil

In cooking, fats are used to shorten baked products to make them soft and crumbly. It also adds flavour and colour.

Functions:- enriches mixtures, adds moistness, adds flavour, increases shelf life…
