Unsaturated oils contain C=C double bonds, double bonds are detected by reacting with bromine or iodine and turning the solution colourless.

Monounsaturated fats contain one C=C double bond

Polyunsaturated fats contain more than one C=C double bond

Long chain molecules = lots of carbon atoms
