Triglycerides are made of one molecule of glycerol with three fatty acids. Fatty acids have long Hydrocarbon tails, these are hydrophobic making them insoluble in water. The fatty acids consist of the same basic structure but the hydrocarbon tail varies. Lipids contain an ester bond.
