Carbon chains and rings
atoms are most stable when their outer energy levels contain a specific number of electrons - normally8 because carbon atoms have 4 electrons in their outer orbitals they can gain stability by sharing 4 electrons with other atoms
Because carbon molecules can share four electrons it means that carbon is able to share its electrons with 4 other molecules


Double bonds also occur
Carbon forms 2 bonds with another atom
C = C double bonds in hydrocarbon chains
C = O double bond is many molecules including organic acids

I dunno what you mean by 'water molecule is broken' surely a water molecule is added to break the bond?
