Rub fat into flour
  • the fat is distibuted evenly - coats the flour particles forming a water-proof barrier
  • inhabits the formation of gluten - toughens mixture
  • air is incorporated

Possible faults

  • under mixing causes uneven texture
  • over rubbing is difficult due to the fat content - too low

Add sugar

Mix in eggs and milk - forms a dough/dropping consistancy

  • ingredients are bound - some gluten strands are formed when liquid comes into contact with the flour
  • baking powder starts to
