Flour/Self Raising flour
-Contains lots of gluten, gives an elastic structure, forms the basic basic shape.
Sugar
-Sweetner, a form of carbohydrate, preservative and bulking agent
Butter/Margarine
-give flavour, to aerates cakes etc, trap and hold air, gives volume and light texture, increase shelf life
Eggs
-Trap air, especially when beaten, containprotien, holds emulsion to the mixture,add colour
