  • 2 cloves of garlic - flavour sauce 5AD
  • 1 fresh red pepper - flavour, heat/spice 5AD
  • 1 fresh red chilli - flavour heat/spice 5AD
  • 800g canned chopped tomatos - colour, flavour, texture
  • 450g rigatoni pasta - texture, colour
  • 2tbsp parsley - garnish colour
  • 6tbsp parmasan cheese - garnish flavour

method                                              Control check                                      Hygiene and safety

Prepare ingredients            knifs are kept away when not in use    Equipment and ingredients washed

Oil and butter into pan                       Medium heat                                All clean, handle is to side

200g pasta flour- more strechey and useable

2 eggs - adds air and textur

1/2 tsp salt - ad flavour

1 tbsp water - make sticky so its less dry and more useable

medium bowl combine flour and salt

make well in flour

add beaten eggs and water

flour surface to knead dough 5 minuets

make green spinch - red beetroot - black sqid ink
