Proteins a reaction wihave an active site hich has a key sort of fit it has an active site around this.Once they get aove around 37 degrees (body temp) they denature - change shape.

A catalyst is a substance that increases the speed of a reaction without being changed or used up in the reaction.

Enzymes act as biological catalyst . Enzymes reduce the need for high temps.

PH and TEMPERATURE can affect enzymes.

Enzymes can be used for :

Biological washing powders-Lipase&protease 

Sports drinks-Carbohydrase                              slimming foods-isomerase

Some soft centered chocolates-Invertase           Baby food-protease

COLLISION THEORY

Collision Theory   (Chemistry) 

More collisions means the rate of reaction is quicker..

1) The higher the temperature the more particles move

2) If the  solution is more concentrated the more particles there are to collide

3) If they have a larger surface area which is broken down there will be more frequent collisions.

4) Catalysts lower the energy causing more successful collisions. 

 FASTER COLLISIONS ARE ONLY CAUSED BY INCREASING THE TEMPERATURE.
