Production of Soy Sauce

Soy Sauce is made from fermented soy beans and wheat.

1. Soy beans and roasted wheat are mixed together.

2. They are fermented by the fungi Aspergillius

3. The are fermented a second time by yeast

4. Then a third time by Lactobacillus

5. The Soy Sauce is filtered to remove any particles

6. The mixture is then pasteurised to kill off harmful microorganisms

7. The Soy Sauce is put into sterile bottles ready to be sold.
