In the mouth carbohydrates are broken down by carbohydrase into

digestion of carbohydrates and proteins as well as producing lipase

Hydrochloric acid is realised by cells in the wall of the stomach. This kills
bacteria in the food and creates conditions that help the enzymes to work
effectively.
