Advantages

  • Enzymes are specific, so they only catalyse a reaction when you want them to.
  • Able to use lower temperatures and pressures, results in lower cost, saves energy.
  • Enzymes able to work for a long time, can continually be used.
  • Are biodegradable, cause less environmental pollution.
  • Can help to speed up digestion processes within the human body.
  • Enzymes generally are not toxic.
  • Can be used in food, such as baby food.
  • Many of the enzymes come from microorganisms which can easily be grown.

Disadvantages

  • Some people can develop allergies to the enzymes.
  • Enzymes can be denatured by even a small increase of temperature .
  • Susceptible to poisons and changes in pH.
  • Conditions must be tightly controlled.
  • Enzymes can be expensive to produce.
  • Contamination can have an effect on the enzyme when it is mixed with other substances. (Difficult for enzymes to with mixtures.)
  • High cost for enzyme isolation and purification which can discourage their use.

Evaluation

Overall, there are positive aspects and negative aspects when it comes to the use of enzymes within the industry, even though enzymes generally are not toxic people may still suffer a reaction to them. Another is, enzymes are quite costly and cannot always work which may effect the production of the food.
