Making soy sauce?

I was doing an exam paper and the question was: The fungus Aspergillus secretes enzymes

name one substance that is broken down my these enzymes?

And: The bacteriaum Lactobacillus is added in fermantation at stage two

What effect does this have on the Aspergillus fungus?

Does anyone have any ideas?

I never got the paper before it came out but it was on one of the edexcel past papers that i was doing at home! :-)

this was today's paper, you somehow managed to get it before it actually came out?

answer 1= Enzymes produced by the Aspergillus mould catalyse the breakdown of the proteins and carbohydrates in the mixture.

answer 2= Lactobacillus bacteria is able to tolerate high levels of Sodium Chloride and low levels of Oxygen, giving competition for the Aspergillus mould. The conditions supress the activities of the Apergillus mould.

 Its stops it from carrying on its actions, otherwise it will continue
