Hey my AQA GCSE Food Tech is tomorrow and Section A is based on pasta products. I was planning on making something like lasagne but I'm wondering if in the reciepe stage part i will need to write how to make pasta itself? e.g 'flour + water + egg' etc? or can i just say boil the pasta in salted water until al dente?
Yes, you need to plan two pasta dishes knowing the main components for both and preferably the dimensions. Also you will need to know the full ingredients list, method and quality control points for one of the two pasta dishes.

u don't need to know how to make pasta u just say how to cook e.g. put in boiled water
thank you! So just to double check I will need to be able to know how to make the pasta itself? So and to make it would that be semolina flour with water and egg, then knead it for 10-20 mins to develop gluten and make the dough elastic , roll it thinly and cut it into strips/shape, and then boil it in salted water until al dente?
