  • Ways to improve a hotel's reputation for being 'environmentally friendly' in relation to preparing, cooking and serving food.
    • Preparing
      • keep equipment as clean as possible - uses less energy
      • do not over-order food

      • avoid over use of garnish and decoration that customers will not eat
      • use dispensers for salt, sugar, sauces, etc.
      • cut down on use of disposables, e.g. paper products
      • ensure accurate portion control to avoid waste
