- Open chain with an aldehyde or ketone group and therefore acts as a reducing agent (donates an electron in a redox reaction)
- Reducing monosaccharides include glucose, fructose and galactose.
- Presence of reducing sugars is tested using Benedict's solution (copper sulfate)
- Benedict's (blue) heated with sugar solution. If a reducing sugar is present, a red/orange precipitate is formed
