  • C1.6 Plant oils
    • extracting vegetable oil
      • using steam (distillation)
      • important foods - contain nutrients
      • biofuels - biodiesel
      • unsaturated oils - C=C bonds
        • + bromine water = colourless solution
    • Cooking with veg oils
      • useful
        • high boiling points
        • increases energy content of food
      • hardened to
        • increase melting points
        • make them solids at room temp
        • e.g. butter - suitable for spreading
      • Hardening
        • 60 degrees Celcius
        • nickel catalyst
        • Hydrogen add onto C=C bonds in molecules
      • known as hydrogenated oils
    • Emulsions
      • mixture of oil and water
      • emulsifier = substance that prevents oil and water from seperating
      • hydrophobic
        • long hydrocarbon
        • 'tail' dissolve in oil
      • hydrophilic
        • 'head' sticks out in water
      • like charges repel and so oil droplets repel each other
      • emulsifiers = make texture better
